WHY YOU’RE GONNA LOVE OUR KETO GUACAMOLE RECIPE

Our guacamole recipe is a snap to make and absolutely the best tasting guac we’ve ever made. We use only fresh ingredients: avocados, lime juice, red onions, cilantro, jalapeños, and tomatoes, (with a little added kick of cayenne). This recipe is perfect as a dip for our Parmesan Cheese Crisps or Multi Seed Crackers  – both a great substitute for tortilla chips. If you follow a keto diet or low carb diet, this is the perfect appetizer for you.

 

WHAT NUTRIENTS ARE IN AVOCADOS?

Avocados provide a hefty amount of monounsaturated fatty acids (a healthy type of fat) and are a great source of vitamins C, E, K, B6, magnesium, and potassium. Healthy fats also help with the absorption of fat-soluble vitamins, minerals, and other nutrients. Since they contain high levels of healthy fats, they provide the added benefit of helping us to feel fuller, longer, which is right where you want to be if you follow a keto or low carb diet! One avocado provides 10 grams of fiber, which is almost one-half of your daily requirement. Eating fat also slows the breakdown of carbohydrates, which helps to keep blood sugar levels stable, and they’re naturally free of sodium, cholesterol, and sugar. Impressive, right?

 

 

HOW TO CHOOSE THE PERFECT AVOCADO

We’ve tried making guacamole so many times, but never seemed to get the hang of it. We couldn’t figure out what we were doing wrong. They all have the same basic ingredients: avocados, lime juice, cilantro, onion, jalapeños, spices and sometimes tomatoes, and every time a friend or relative gave us their recipe, we were unable to replicate at home.

Here’s what we learned: choosing the right avocado is the key to making delicious guacamole. They need to be ripe and firm, NOT over-ripe. How do you figure that out? Gently press on one end. It should be firm, but yield to gentle pressure. If you can find avocados with the stem attached, that’s a good sign it’s fresh. If it’s overly soft/mushy, walk away, because they’ll be brown on the inside. If you can only find unripe avocados, bring them home and place on your countertop for a couple of days until ripe. If they’re already ripe and you’re not ready to use, store in the refrigerator for a day or two. The next thing we figured out: let the chopped tomatoes sit for a few minutes to drain out the extra moisture before adding.

 

INGREDIENTS

Avocados – We prefer Hass avocados for their creamy texture and nutty flavor.

Fresh Lime Juice – Only freshly squeezed will do.

Kosher or Sea Salt – Or Any Coarse Variety

Cayenne Pepper or Red Pepper Flakes – or both if you love spicy guac.

Finely Diced Cilantro

Finely Diced Red Onions

Jalapeño – seeded and chopped

Roma or Plum Tomato – chopped and drained. These varieties have fewer seeds, more flesh, and a lower moisture content.

 

INSTRUCTIONS

Dicing/Chopping: Finely dice the cilantro and onions. Then chop the jalapeño and tomatoes. Set aside.

Scoop: After scooping out the flesh of the avocado, put in a mixing bowl and coat with fresh lime juice, salt and cayenne pepper.

Mash: Using a fork, mash to desired consistency. We like ours a little chunky, but smooth is delicious, too. Now fold in the diced/chopped ingredients and serve.

Taste: If it’s not spicy enough, go for it – double the cayenne pepper. If you want to brighten up the flavors, add more lime juice. My husband likes to double the onions. Let your taste buds be your guide!

 

HoW TO STORE GUACAMOLE

Store leftovers in refrigerator with plastic wrap touching the guacamole to prevent browning. Stays fresh for up to 3 -4 days.

Ingredients

  • 3 Hass avocados
  • 1 tbsp fresh lime juice
  • ½ tsp salt kosher or sea
  • ¼ tsp cayenne pepper or ½ tsp red pepper flakes
  • 3 tbsp cilantro chopped
  • ¼ cup red onions diced
  • 1 medium jalapeño seeded and chopped
  • 1 medium tomato Roma or plum, chopped

Instructions

  • Slice 3 avocados in half lengthwise. Separate the halves and discard pits. Using a spoon, scoop out avocado pulp and place in medium-size bowl. Add fresh lime juice, salt, cayenne pepper and toss. Using a fork, mash until desired consistency.
  • Fold in cilantro, red onion, jalapeño, and tomatoes until combined
  • Serve and enjoy!
