Bursting with concentrated flavors of tomatoes, green onions, olives and feta, this easy, low-carb side-dish will add glamour to any plate. Serve alongside steak, chicken or fish. Terrific side for any style eggs for a healthy, hearty breakfast.

4medium ripefirm tomatoes
1/4cupextra-virgin olive oil
Kosher or sea salt
Freshly ground black pepper
1/2cupcrumbled feta or shredded mozzarella cheese
4tablespoonschopped ripe olives
2tablespoonschopped green onion
Preheat broiler to high.
Wash tomatoes and remove stem end. Cut tomatoes crosswise in half.
Place cut sides up on glass dish or on baking sheet lined with aluminum foil for easy clean-up. Drizzle olive oil over halved tomatoes and sprinkle with salt and pepper. Top with olives, onions and cheese.
Broil on top rack of oven until tomatoes soften and cheese is slightly browned, about 3-4 minutes. Let stand for 5 to 10 minutes and remove with a spatula to serving plate.
